Red velvet Cake

Ingredients :

Flour : 250 gm
Baking Powder : 1/2 tsp
Eggs : 4
Castor Sugar :  250gm
White Butter : 250gm
Red Colour : 1 tsp
Vanilla essence : 1 tsp


Topping : Whipped fresh cream


Method :



  1. Add baking powder to the flour and sieve 2 - 3 times and keep aside.
  2. Break all the eggs in a large bowl and beat till it is frothy
  3. Melt the butter and add to the eggs. 
  4. Add sugar to the above mixture and beat it till it is creamy.
  5. Add the flour mix to the above mixture in small portions at a time and mix well so that no lumps are formed.
  6. When all the flour has been added to the mixture, add the red colour and vanilla essence and mix well.
  7. Grease and line two baking dish with butter paper.
  8. Pour the cake batter equally into the two tins and bake in a hot oven at 200c for 20 minutes or microwave on high for 10 minutes and then reduce the power to 60% and bake for 5 more minutes. When an inserted toothpick comes clean, the cake is done.
  9. Remove from oven and allow the cakes to cool.
  10. Take out the cakes from the baking dish.
  11. Pour the whipped cream on one cake to cover it up.
  12. Put the other cake on top of it and cover the entire cake with the whipped cream and refrigerate it.
Tip : When baking the cake in microwave,  place a rack and keep the baking dish on top of it because microwave heats from the top.
